Bay - evergreen

In cooler climates can start off a Bay on a kitchen window sill. Keep indoors over the winter as it has shallow roots and needs to mature into a larger plant for outside. OK outside for summer months and is great in a container.

As an infusion it is helpful for digestion and stimulating appetite.

Fresh leaves have a better flavour. Add to soups stocks as a bouquet garni. Good with fish. Put on barbecue coals for a delicious flavour. Add to jars of rice for flavour and put into flour it will deter weevils.

Rosemary - love this story. In the time of Elizabeth 1 the wedding couple wore (or carried) a sprig of rosemary as a sign of fidelity. Bunches were tied with coloured ribbon tipped with gold and given to guests at weddings to symbolize love and faithfulness.
